Gingerbread truffles (gf)

These little festive treats are the perfect Christmas bring along to the yearly celebratory party


These gingerbread truffles are the most festive, delicious and satisfying Christmas treat. They are made using 100% whole foods and are completely gluten free too! Bring these along to any Christmas function to ensure a happy and nourished crowd.

INGREDIENTS

filling

1/2 cup coconut flour

1/4 cup almond flour

Pinch of salt

1/2 tbsp ground cinnamon

1 1/2 tbsp ground ginger

2 tbsp cashew butter (see notes)

2 tbsp agave syrup (see notes)

1 tsp molasses

3 tbsp plant milk


coating

1/4 cup vegan dark chocolate


METHOD

1. In a large bowl, add in all dry ingredients and mix until combined

2. Once dry ingredients are well mixed, add in the wet ingredients and stir until combined (using your hands if needed)

2. Once your mixture forms a dough (yet crumbly) like texture use your hands to roll into 6 evenly sized balls

3. Place balls on a tray and leave in the fridge to set while melting the chocolate

4. Either using the microwave or double boiler method, melt your chocolate until smooth

5. Remove balls from fridge and coat in the melted chocolate, adding a pinch of salt if desired

6. Leave your truffles in the fridge until chocolate is set then serve


NOTES

~ you can use any nut butter you have available eg. almond, peanut, sunflower seed etc.

~ you can replace agave with any liquid sweetener of choice eg. rice malt syrup, maple syrup etc.

~ store truffles in a container in the fridge for up to 3 weeks
