Just like the classic meatloaf, however this lentil loaf is free of meat and a super delicious meat-free option that the whole family can enjoy
This lentil loaf is a winner with all meat eaters. Similar to your classic meatloaf, this lentil loaf is perfect for a family dinner or a special occasion. A perfect meat-free substitute for Christmas or Thanksgiving that everyone will be able to enjoy.

INGREDIENTS
loaf
1 can lentils (drained and rinsed)
1 onion
1 carrot
2 stalks celery
1/2 cup frozen peas
1 cup oat flour (see notes)
1 tbsp ground flax
3/4 cup tomato passata
1/2 cup vegan bbq sauce
1 tbsp tahini
1/2 tbsp thyme
1/2 tbsp cumin
1/2 tbsp mixed herbs
1 tsp onion powder
1 tsp garlic powder
METHOD
1. Preheat oven to 180°C/350°F and line a loaf tin
2. In a pan sauté onion, carrot and celery until onion is translucent and veggies are partially tender
3. Add the rest of the ingredients into the pan and using a potato masher (or your hands) mash mixture together until combined (adding more flour or tomato/bbq sauce if needed)
4. Pour the mixture into the tin, light pressing in mixture and flattening the top
5. add on some extra tomato and bbq sauce on top and cook in the oven for 35-40 minutes
6. Leave to slightly cool and firm up before slicing and serving
NOTES
~ for gf eaters replace the oat flour with any other gf flour of choice eg. buckwheat
